Patties with salmon and greens

Ingredients:

  • 1 pound (450g) fresh salmon fillet, skin removed
  • 1 cup breadcrumbs (or panko for extra crunch)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1/4 cup fresh dill or parsley, chopped (optional, for added flavor)
  • 1 cup fresh spinach or kale, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for cooking)

Instructions:

  1. Prepare the Salmon:

    • Preheat your oven to 375°F (190°C).
    • Place the salmon fillet on a baking sheet lined with parchment paper and bake for about 12-15 minutes, or until fully cooked and flaky. Let it cool slightly, then flake it with a fork.
  2. Mix the Ingredients:

    • In a large bowl, combine the flaked salmon, breadcrumbs, chopped onion, minced garlic, beaten egg, and chopped dill or parsley.
